Bring back the Washed Ethiopian Yirgacheffe!
This is going to be a fairly short post about a coffee I had last week that made me very happy. No, this did not have any experimental extended fermentation. It was in fact a classic washed Ethiopian that I did not realize I have been missing.
The notes are so clean that you can clearly decipher and identify the ups and downs, highs and lows in every sip. Yellow fruits like peaches fill the majority of the palate, and as you sip, floral aromas enter your nasal cavity delighting your olfactory system.
Dan brewed this using two different pour overs methods. Just when I thought the V60 was better, the Origami really surprised me. It added acidity on top of the sweetness that was missing on the V60.
Dan explained that he can grind finer on the Origami, using the V60 filter paper instead of the Kalita. The Origami has a wider opening at the bottom, the air channels between the filter paper and the brewer speed up the extraction and flow rate.
