Roast Story - Artisan Coffee Roasters
On my days off, I love exploring new coffee places. But, when I am working I’ll make it a point to do a quick google search and find a coffee pit stop. Most of the new cafes and roasters that I discover are through Instagram and suggestions from friends, but this time I was very surprised when the recommendation came from somewhere I didn’t expect.
Calla Cafe x Jebena Specialty Coffee
It’s very rare I get to tick two boxes in my coffee list in one visit. In this case, it was a combination of Calla Cafe and Jebena Roastery. Last week, I chanced upon this cafe after finishing up with some work in Meydan.
What I’m Brewing: Ethiopia Halo Beriti and Panama Graciano Cruz by Archers
I knew Archers meant business when I first brewed their Costa Rica H17. This coffee was super complex and every time I changed my recipe, I got different notes. Strong notes of green apple one time, and sweet and sour pineapple the other time. Was it my inability To brew consistently or was it just magic? Let’s go with the former because I love experimenting.
What I’m Brewing!
My primary way of brewing coffee at home is using the V60, Chemex, and the Aeropress. I also like to change from time to time and opt for a classic French Press or a Mokapot.

Casually browsing through YouTube during lunch time and I come across this video by Tales Coffee. To summarize - Vincent who is the head roaster, set out to brew coffee on a V60 with a cold water bloom.

I was introduced to my first cup of Siphon in 2019. I remember vaguely that it was an Ethiopia because of the intense floral and fruity notes and a nice juicy body. It is probably one of the coolest brew methods today after espresso of course. The Siphon brewer was invented in the 1840s. It uses heat, pressure and vacuum to brew your coffee.
