Experiencing Vietnamese Coffee for the First Time
I had recently read about Vietnamese coffee briefly in Standart and it had left my mind until recently Sumit, an acquaintance who I meet every time I pop over at DMCC for a coffee tasting event, shared a story on Instagram. It featured a peculiar silver dripper I haven’t seen before.

The Coffee Story: Herman Jubya
I first met Herman briefly at the old branch of Coffee Architecture, at that time he brewed an Ethiopian Cup of Excellence on a Cortado roasted by Archers, needless to say it was excellent. They were on the process of moving to a new location at Saadiyat Island overlooking the beach.

Brewing Coffee the Ethiopian Way
For the coffee lovers, Ethiopia is a buzz word making Ethiopian coffee probably the most popular origin here in the UAE next to Brazil. As per legend, coffee was actually discovered in this African country by a goat herder named Kaldi. His goats were more “jumpy” than usual after eating from a plant with small red fruits.

The Coffee Story
Have you ever wondered who’s behind the cup of coffee served to you? When it comes to me, I am very intrigued and often watch closely what is happening behind the barista bar. I’m not trying to be creepy here, but my aim is to learn from their work flow and spot any unusual brewing methods, if any, which is usually a conversation starter.

Roast Story - Artisan Coffee Roasters
On my days off, I love exploring new coffee places. But, when I am working I’ll make it a point to do a quick google search and find a coffee pit stop. Most of the new cafes and roasters that I discover are through Instagram and suggestions from friends, but this time I was very surprised when the recommendation came from somewhere I didn’t expect.

Calla Cafe x Jebena Specialty Coffee
It’s very rare I get to tick two boxes in my coffee list in one visit. In this case, it was a combination of Calla Cafe and Jebena Roastery. Last week, I chanced upon this cafe after finishing up with some work in Meydan.

What I’m Brewing: Ethiopia Halo Beriti and Panama Graciano Cruz by Archers
I knew Archers meant business when I first brewed their Costa Rica H17. This coffee was super complex and every time I changed my recipe, I got different notes. Strong notes of green apple one time, and sweet and sour pineapple the other time. Was it my inability To brew consistently or was it just magic? Let’s go with the former because I love experimenting.

What I’m Brewing!
My primary way of brewing coffee at home is using the V60, Chemex, and the Aeropress. I also like to change from time to time and opt for a classic French Press or a Mokapot.

Cold Bloom Pour Over on a V60
Casually browsing through YouTube during lunch time and I come across this video by Tales Coffee. To summarize - Vincent who is the head roaster, set out to brew coffee on a V60 with a cold water bloom.

What I’m Brewing: Guatemala, Las Moritas Pacamara by City of Saints Coffee Roasters
This coffee is a carryover from the previous month. But I’m really excited I’m getting to taste and experience some Guatemalan coffee after the DMCC event last month.

What I’m Brewing: Guatemala ''Princesa'' Geisha by Falcon Coffee Roasters
Falcon Coffee Roasters, located in Ras al Khor, is a small-batch roastery. The coffee here is roasted by Rustam, and that is evident enough to remove any use of the word “small”.

What I’m Brewing: Ethiopia Sidamo by Profile Roasters
Profile might be a micro-batch roastery based in Abu Dhabi, but the coffee here has a lot of potential. They opened doors earlier this year and I found out about this place by accident while waiting for a client meeting.

Siphon Coffee Maker: Immersive Immersion Experience
I was introduced to my first cup of Siphon in 2019. I remember vaguely that it was an Ethiopia because of the intense floral and fruity notes and a nice juicy body. It is probably one of the coolest brew methods today after espresso of course. The Siphon brewer was invented in the 1840s. It uses heat, pressure and vacuum to brew your coffee.
